Paleo Egg “Pizza”

I’m BAAAACK! I can’t believe it’s been so long since I have posted something. I also can’t believe that after all of this time, I lost the folder containing all the recipes I had been saving to post… YEAH. That happened. So, if anyone has any recipe requests, send them my way! Starting from scratch over here. A lot has been going on in my little world. After selling our house and having a baby, who is adorable by the way, look at that FACE! I finally feel like I can get back to writing again. Get ready for food, fun and hilarity. You heard me. HILARITY. Alright then… I figured I would start with something easy to make and is requested often by my kids. I’m sorry to say it’s not really pizza. I know, I know. I shouldn’t kid about pizza. That’s the name I gave this dish because I can cut it into triangles and it makes my kids eat it. Yep. Word choice has amazing power with children. That’s why we …

Easy Paleo Berry Tart

I have a confession to make. I’ve felt like a huge slacker in the blogging world this week! I haven’t posted anything in a whole week. At first I was telling myself that I couldn’t think of anything to post. Then I came up with a HUGE list of things I could post. Then I had a few days of simply procrastinating and finding something else that I “needed” to do instead. I then had a day that my kids were crazy – fighting, yelling, everything is the end of the world – you know how it goes. And they are only 4 and 1 1/2. I can only imagine what the future holds… needless to say, nothing got done that day. I had a day that I fell asleep really early, like passed out on the couch, mouth open, snoring if I did – OUT. My husband joked that he thought about taking a picture of me. I’m just glad his sense of humor isn’t nearly as sadistic as mine – because I totally would take a …

Paleo Apple Tart

It’s January 3rd and I have already gotten rid of 5 boxes of stuff from the house. Stuff we never use but sits around or travels from room to room making a mess. Over the next week, I am hoping to organize my house more and more. With two small children, things can get crazy – fast. After that, it can be hard to recover the cleanliness! But since I am off work for the next month and a half, I am taking full advantage of my time to try and minimize and organize. With hope – when I go back to my day job (I work for a farm, in case anyone has missed that tidbit – nothing to do on a farm (at least for me) in January!) Anyways, when I go back to my day job – hopefully I can manage to maintain some level of non-catastrophe so it doesn’t look like a toddler bomb went off in my house all the time. Speaking of time off, I meant to get you …

Paleo Waffles

I am always searching for recipes that look good and that I actually have the ingredients to make it. I’ll admit it… I don’t usually plan my meals. I just buy a ton of produce and go from there! The downside to not planning is that I invariably forget something we “need”. Usually that just means we’re stuck with eggs for breakfast but yesterday I decided that it can’t be that hard to make your own waffle recipe… right? I am so glad that I did and I nailed it on the first try! I only had coconut flour in the house, and usually I don’t like using coconut flour in waffles because it can make them pretty dry, but these are the best coconut paleo waffles I have ever had! So I’m going to get right to it and give you the recipe! Paleo Coconut Flour Waffles Makes 4 large belgian waffles Ingredients: 8 eggs 1 banana – blended/mashed 1/4 tsp salt 1/2 tsp baking soda 1/2 tsp vanilla 1/2 cup coconut flour Directions: Mix eggs, …
